Green Herb Smoothie

A green herb smoothie from Spoonsparrow is perfect for spring to power up again and recharge your vital nutrient tanks!

Ingredients

  • 1.5 bunch herbs (30 g; mint, basil, lemon balm)
  • 200 g spinach leaves
  • 1 large pear (250 g)
  • 1 ripe banana
  • 30 g pistachio nuts (2 tbsp)
  • 1 lemon (juice)
  • 400 g plain yogurt

Instructions

    Wash the herbs for the green herb smoothie, pat dry, pluck a few leaves for garnish and set aside; roughly chop the rest. Wash and pat spinach dry. Peel, wash, halve, core, and dice the pear. Peel and dice the banana.

    Take 2/3 of the spinach and herbs with 1 tbsp pistachios, lemon juice, half the pear, and 3 tbsp water in a blender and blend finely. Distribute the mixture into four glasses.

    Add the banana with the other half of the pear, remaining spinach, leftover herbs, and nuts to the blender and puree. Then stir in 150 g plain yogurt. Pour this mix over the herb blend. Thin the remaining yogurt with 1–2 tbsp water, pour as a final layer on top, and decorate with the reserved herbs.
