Ingredients

  • 0.25 Cucumber
  • 200 g cooked duck meat
  • 2 tsp oil
  • 6 tbsp plum sauce
  • 2 nori sheets
  • 360 g cooked sushi rice
  • 0.5 tsp wasabi (tube)
  • 1 bunch chives
  • 4 tbsp pickled ginger (optional)

Instructions

    Wash the cucumber, quarter it lengthwise and deseed. Cut the duck meat into pieces. Heat oil in a pan and sear the duck for 2-3 minutes on all sides. Deglaze with 4 tbsp plum sauce and turn the duck in the sauce.

    Cut the nori sheets in half. Spread rice on them, flip so the rice side faces down. Brush nori thinly with wasabi and top with warm duck meat and cucumber. Roll from the long side, wrap in plastic film and shape with a bamboo mat.

    Slice chives into fine ribbons. Cut the sushi rolls in half and roll each half in chives. Divide each half into 3 pieces and drizzle remaining plum sauce. Serve Green Duck Rolls with pickled ginger if desired.
