Ingredients

  • 300 g zucchini
  • 250 g small cherry tomatoes
  • 400 g small waxy potatoes
  • 2 sprigs fresh thyme
  • 100 ml olive oil
  • 50 g grated Parmesan
  • 8 sea bass medallions (80 g each)
  • juice of one lemon
  • Salt
  • ground pepper
  • fat for greasing the baking dish

Instructions

    Wash, trim and slice zucchini into rounds. Wash tomatoes, slice them removing stems. Wash potatoes, peel and slice thinly. Wash thyme, shake dry and remove leaves. Grease a baking dish and layer vegetable slices in a brick‑like pattern.

    Mix half the olive oil with salt, pepper and thyme leaves; drizzle evenly over the layers. Bake in a preheated oven at 180 °C for about 25 minutes. Sprinkle cheese on top and bake another 10 minutes to gratinate.

    Wash sea bass medallions, pat dry with kitchen paper, drizzle with lemon juice and season with salt and pepper. Heat remaining olive oil in a pan; fry each side for about 3 minutes. Plate the fish over the vegetable gratin.
