Ingredients
- 500 g Green Asparagus
- 2 tbsp lemon juice
- 1 tsp salt
- 1 tsp maple syrup
- Pepper (freshly ground)
- 2 tbsp pine nuts
- 30 g Parmesan

Wash the asparagus, peel the lower third of each stalk and cut off the woody ends. In a shallow wide pot bring about 3 cm of water to a boil, season with maple syrup, salt and lemon juice. Add the prepared asparagus and cook for about 10 minutes until firm.

Meanwhile, toast the pine nuts in a non‑stick pan without oil over medium heat, stirring constantly until golden brown, then remove from the pan and let cool.

Lift the asparagus out of the broth and arrange on preheated plates. Grate some Parmesan over it and sprinkle with the toasted pine nuts. Add freshly ground pepper to taste. Serve the green asparagus with Parmesan immediately.
