Crispy Parsnip Chips

Ingredients

  • 300 g parsnips (about 3 parsnips)
  • Soy oil (or another neutral-flavor oil for frying)
  • Salt
  • Pepper

Instructions

    Clean, wash, peel the parsnips and trim the ends. Slice lengthwise into thin rounds.

    Meanwhile heat the oil in a small pot until very hot. Pat the parsnip slices dry, then fry them in batches over medium heat for 1–2 minutes until golden yellow.

    Drain the chips on paper towels, season with salt and pepper, place in serving bowls and serve.
