Spicy Apple Celery Puree

The spicy apple celery puree from Spoonsparrow pairs perfectly with braised meat and brings variety to the plate!
Ingredients
- 330 g cauliflower celery (1 piece)
- 200 g tart apples (1 tart apple)
- Salt
- 4 tbsp soy cream
- 1 tbsp butter
- Pepper
Instructions

Peel the celery and cut into about 2 cm cubes.

Quarter the apple, peel, core, and cut into cubes.

Add apple and celery with a pinch of salt to a pot, pour enough water to cover them halfway. Cover, bring to a boil, then simmer for about 20 minutes on low heat. Drain the cooking liquid, return the pot to the hot stove and let it evaporate briefly.

Puree with an immersion blender or regular blender until smooth.

Whisk soy cream and butter together, season with salt and pepper, and serve immediately.
