Mediterranean Lamb Fillet

Ingredients

  • 800 g lamb loin fillet
  • Sea salt
  • Pepper
  • 2 tbsp olive oil
  • 1 Garlic clove
  • 1 Organic lemon
  • 100 g pitted black olives
  • a handful fresh mint

Instructions

    Rinse the lamb fillet under cold water, pat dry and season with salt and pepper.

    Heat 1 tablespoon of oil in a pan and sear the lamb fillet all around until browned. Remove from the pan and place on a baking sheet lined with parchment paper.

    Peel and finely chop the garlic, mix with the remaining oil. Wash the lemon hot, pat dry, zest the peel and squeeze juice from half the lemon. Combine both with the garlic oil and brush the mixture over the meat. Bake in a preheated oven at 120 °C (fan 100 °C; gas: level 1–2) for 15–25 minutes, or longer/shorter to taste.

    Remove from the oven, let rest briefly. Slice diagonally and serve on plates with olives. Wash mint leaves, shake dry and garnish the meat with them.
