Gratinated Pineapple
Gratinated pineapple with piment sugar and orange syrup: pineapple and orange, both rich in vitamin C, cover half of the daily requirement for this dessert.
Ingredients
- 3 oranges (including 1 organic orange)
- 5 tbsp maple syrup
- 40 g pistachios
- 1 medium pineapple
- 5 piment seeds
- 75 g cane sugar
- 4 tbsp Sour cream

Rinse one orange hot, dry and finely grate its peel. Squeeze all oranges and measure about 250 ml of juice. Bring the orange juice with 1 tsp grated orange zest to a boil in a small pot and reduce until thick.

Remove from heat and stir in the maple syrup.

Meanwhile, roughly chop pistachios and lightly toast them in a pan without oil. Transfer to a plate and let cool.

Line a baking sheet with parchment paper. Peel the pineapple, cut its flesh into 5 mm thick slices and place on the sheet.

Finely crush piment seeds in a mortar and mix with sugar.

Sprinkle the pineapple slices with the piment sugar.

Grill the pineapple slices under a hot oven broiler in the middle of the oven for 2–5 minutes until golden brown. Transfer to a plate, drizzle with orange syrup, add 1 tbsp sour cream per portion and sprinkle with pistachios before serving.
