Ingredients

  • 12 oysters (e.g., Sylter Royal)
  • 150 g spinach
  • 3 tbsp olive oil
  • pepper (ground)
  • Lemon (juice)

Instructions

    Wash, rinse, and sauté the spinach in 1 tbsp olive oil in a pan until wilted, then dry for a few minutes; season with pepper.

    Remove from heat and finely chop.

    Open the oysters, clean them, remove from shells, and place on a plate.

    Collect the oyster liquid, strain it.

    Clean the deep oyster shells.

    Mix olive oil, oyster liquid, and lemon juice together; season with pepper.

    Return the oysters to their shells, distribute chopped spinach over them, drizzle sauce on top. Bake in a preheated oven at 220°C for about 5 minutes.
