Grilled Sea Bass

Ingredients

  • 600 g sea bass (cutlets; pieces about 150 g)
  • 2 tbsp lemon juice
  • 1 dried chili pepper
  • 1 tsp black peppercorns
  • 1 tsp coarse sea salt
  • 2 Garlic cloves
  • 0.5 handful oregano
  • 100 g cherry tomatoes
  • 4 tbsp olive oil
  • 100 g large black olives

Instructions

    Rinse the fish cutlets and pat dry. Drizzle with lemon juice. Crush the chili, peppercorns, and sea salt in a mortar. Rub the spice mixture onto the fish.

    Peel and halve the garlic cloves. Rinse oregano, shake dry, and pluck the leaves. Rinse the tomatoes. Heat oil and briefly sauté the garlic.

    Cook the fish over low heat, turning occasionally, for about 6 minutes. Add the tomatoes and drained olives in the last 2–3 minutes. Sprinkle oregano on top and serve.
