Baked Oysters with Creamy Soybean Sauce

Ingredients

  • 4 oysters
  • 200 g queller (sea lettuce)
  • 1 egg yolk
  • 1 tsp breadcrumbs
  • 1 tsp butter
  • white pepper
  • 100 ml soy milk
  • 50 ml fish stock

Instructions

    Wash the queller and blanch briefly in salted water. Puree finely. Mix breadcrumbs with butter, fold in the egg yolk and queller puree, season with white pepper.

    Open the oysters, clean them and loosen the meat. Spread the gratin mixture over each oyster and bake under a preheated grill for about 2–3 minutes.

    Heat soy milk with fish stock, whisk until frothy and spoon only the foam onto the baked oysters.

    Serve on sea salt if desired, garnished with fresh queller.
