Gratinated Halibut Steak with Chickpeas
Gratinated halibut steak with chickpeas from Spoonsparrow is always wonderfully good.
Ingredients
- 600 g Spinach
- Salt
- 400 g canned chickpeas
- 4 halibut steaks (220 g each)
- 6 tbsp Olive oil
- Pepper (freshly ground)
- 1 tbsp Lemon Juice
- 2 tbsp breadcrumbs
- 2 Tbsp softened butter
- 1 tbsp horseradish
- 1 Garlic clove
- 0.5 tsp turmeric
- 150 ml dry white wine
- chili flakes

Wash, trim and briefly blanch the spinach in salted water. Cool, drain and roughly chop. Drain the chickpeas.

Preheat the oven to 220°C on grill mode. Wash and pat dry the halibut steaks, brush with 2 tbsp oil, season with salt and pepper, drizzle with lemon juice, and place on a parchment-lined tray. Roast for about 4 minutes until golden brown. Mix breadcrumbs with butter and horseradish, season lightly with salt. Flip the steaks and spread a generous spoonful of the butter-breadcrumb mixture over each one. Return to the oven for another 3-4 minutes to finish cooking.

Peel and finely chop the garlic; sauté briefly in the remaining hot oil. Add turmeric and deglaze with white wine. Stir in spinach and chickpeas, letting them heat through for 2-3 minutes. Season with salt, plate onto bowls, top with the halibut steaks, and sprinkle with pepper and chili flakes before serving.
