Halibut with Vegetables

Ingredients

  • 1 large zucchini
  • 2 onions
  • 1 Garlic clove
  • 6 tomatoes
  • 100 g green olives
  • 4 tbsp olive oil
  • 0.5 lemon (juice)
  • Salt
  • Pepper
  • 1 dried oregano
  • 600 g halibut fillet
  • fresh oregano (for garnish)

Instructions

    Preheat the oven to 200°C with upper and lower heat.

    Wash the zucchini and cut into about ½ cm thick slices. Peel the onion and garlic. Slice the garlic finely and cut the onion into strips. Blanch the tomatoes in boiling water, cool them, peel off the skins, remove the stems, and dice small. Slice the olives. Brush a baking dish with 2 tbsp oil and add the vegetables. Season with lemon juice, salt, pepper, and oregano.

    Rinse the fish, cut it into four equal pieces, drizzle with lemon juice, season with salt and pepper, and brush with the remaining oil. Place on top of the vegetables and bake for about 8 minutes.
