Ingredients

  • 400 g Hokkaido pumpkin (1 piece)
  • 2 shallots
  • 1 stalk Parsley
  • 100 g whole grain breadcrumbs
  • 400 g ground chicken
  • 2 Eggs
  • 60 g spelt whole wheat flour (3 tbsp)
  • Salt
  • Pepper
  • 1 tsp garam masala
  • 2 tbsp Rapeseed oil

Instructions

    Wash, core and grate the pumpkin finely. Peel and finely chop the shallots. Wash the parsley, shake dry and finely chop the leaves.

    Mix the grated pumpkin, shallots and parsley with breadcrumbs, ground chicken and eggs. Add flour and season with salt, pepper and garam masala.

    Heat oil in a non‑stick pan. Using two spoons, spoon portions of the meat mixture into the pan and fry on medium heat for 5–6 minutes until golden brown on both sides.

    Remove the pumpkin chicken patties and drain on kitchen paper.
