Gratinated Green Beans
Gratinated green beans provide a superb mineral package with plenty of magnesium for good muscle function. Zinc and iron are also beneficial.
Ingredients
- Salt
- 300 g frozen green beans
- 400 ml classic vegetable broth
- 1 tsp dried thyme
- 100 g spelt whole-grain semolina
- 60 g blue cheese (50% fat)
- Pepper
Instructions

Bring plenty of water to a boil in a pot, salt it and add the beans. Bring to a boil and simmer covered over medium heat for 8 minutes.

Meanwhile, bring the vegetable broth with thyme to a boil. Stir in the spelt semolina and bring to a boil again. Simmer covered over low heat for about 8 minutes, stirring occasionally.

In the meantime, cut the blue cheese into small cubes. Drain the beans in a sieve.

Season the spelt semolina with salt and pepper and place it in a shallow baking dish.

Spread the beans as wide strips over the semolina and top with the blue cheese cubes.

Grill under the preheated oven grill on the middle rack for 2–3 minutes until the cheese melts. Remove and sprinkle with pepper.
