Creamy Cauliflower Soup

Ingredients
- 400 g fresh cauliflower
- 200 g starchy potatoes
- 1 onion
- 2 tbsp butter
- 800 ml vegetable broth
- 200 ml heavy cream
- Salt
- Pepper
- nutmeg

Clean, wash the cauliflower and cut crosswise into florets. Wash, peel, and cube the potatoes. Peel and finely dice the onion. Heat the butter in a large pot and sauté the onion. Add the cauliflower, potatoes, and broth; cover and simmer over medium heat for about 25 minutes.

Puree the soup, stir in the cream, and season with salt, pepper, and nutmeg. Serve the soup on plates, garnished with blanched cauliflower leaves and finely grated carrots or crisp turkey bacon if desired.
