Baked Potato Wedges with Cheese

Ingredients

  • 1 kg waxy potatoes
  • 4 tbsp olive oil
  • coarse Sea salt
  • Pepper
  • 150 g grated Gouda
  • 2 Spring Onions
  • 1 Garlic clove
  • 150 g Sour cream
  • 100 g yogurt
  • 1 tsp lemon juice
  • Salt

Instructions

    Preheat the oven to 200°C (Oven + fan). Wash and brush the potatoes thoroughly. Cut into wedges and toss with olive oil. Season generously with salt and pepper, then spread on a baking tray. Bake in the oven for about 45 minutes, turning occasionally. In the last 10–15 minutes sprinkle the cheese over the wedges and bake until golden brown.

    While the potatoes are baking, wash and trim the spring onions, cutting them into thin rings. Peel the garlic and press it into the sour cream. Add the spring onion rings, yogurt, and lemon juice to the mixture and stir well. Season with salt and spoon into small bowls as desired.

    Let the potato wedges cool slightly, then season again with salt and pepper if needed before serving with the dip.
