Ingredients
- 4 chicken thighs
- 250 ml chicken broth
- 1 onion
- 1 Garlic clove
- 50 g peanuts
- 1 tbsp curry powder
- 1 tbsp Peanut butter
- 2 tbsp oil
- 4 tomatoes
- Salt
- Cayenne pepper
- cilantro (for garnish)
Instructions

Wash and pat dry the chicken thighs, then split at the joint.

Peel and finely dice the onion and garlic.

Wash, quarter, and seed the tomatoes.

Season the chicken with salt, sear in 1 tbsp hot oil in a pan on all sides, then remove. Add remaining oil to the pan, sauté onion and garlic. Stir in curry powder, peanuts, and peanut butter, add broth. Return chicken, cover, and simmer for about 30 minutes, turning occasionally. Add tomatoes and continue simmering for another 5-10 minutes. Season with salt and cayenne pepper, garnish with cilantro, and serve.
