  • 500 g potatoes (starchy)
  • 2 tbsp oil
  • Salt
  • freshly ground pepper
  • 2 stalks leeks (porridge)
  • 8 eggs (size M)
  • fat (for the pan)
  • parsley (for garnish)

Instructions

    Peel, wash, and slice potatoes thinly. Heat oil in a non‑stick skillet. Sauté potatoes for 10 minutes. Season with salt and pepper.

    Clean, wash, and cut leeks into rings. Whisk eggs with salt and pepper. Spread potatoes and leeks in a shallow, well‑oiled baking dish. Pour eggs over them.
