Ingredients

  • 3 untreated grapefruits
  • 1 untreated lemon (zest only)
  • 300 g sugar
  • Tequila
  • 12 clementines (preferably organic, or mandarins as substitute)
  • 2 clementines (zest only)
  • juice of one lemon
  • 300 g sugar
  • Tequila
  • 2 pomelos (untreated)
  • 0.5 pomelo (zest only)
  • 300 g sugar
  • Tequila

Instructions

  1. 1.

    Squeeze all the pomelos. Dissolve the sugar in 400 ml lukewarm water. Add the pomelo juice and 1 tbsp tequila.

    Transfer everything to a bowl and place it in the freezer compartment. Freeze for 4 hours, stirring well every hour.

    Squeeze all the clementines. Dissolve the sugar in 400 ml lukewarm water. Add the clementine, lemon juice and 1 tbsp tequila. Freeze as described above.

    Squeeze the pomelos. Dissolve the sugar in 400 ml lukewarm water. Add the pomelo juice and 1 tbsp tequila. Freeze as described above.

    Serve the granita in hollowed citrus shells (keep them cold in the freezer) to taste.
