Grape Sheet Cake

Ingredients

  • 450 g flour
  • 150 g sugar
  • 2 Eggs
  • 250 g butter
  • 1 kg green seedless grapes
  • 50 g ground almonds
  • 1 tsp cinnamon
  • 4 eggs
  • 60 g sugar
  • 200 g crème fraîche
  • 6 tbsp whipping cream
  • 100 g almond sticks
  • powdered sugar (for dusting)

Instructions

    Mix flour, sugar and a pinch of salt, sift onto the work surface, create a well in the center, crack the eggs into it and scatter butter pieces around the well. Quickly knead with hands into a smooth dough, shape into a ball, wrap in cling film and refrigerate for 30 minutes.

    Preheat oven to 200°C (400°F) fan‑forced.

    Wash grapes, remove stems and drain well.

  4. 4.

    Roll 3/4 of the dough on a lightly floured surface slightly larger than the baking tray, grease the tray and line with dough. Trim excess and knead with remaining dough. Prick the base several times and bake in preheated oven for 10 minutes. Cool. Roll remaining dough to 5 mm thickness and cut into ~1 cm strips. Arrange these as spirals along the edges of the pre‑baked cake, pressing lightly.

    Mix nuts with cinnamon, sprinkle over the base and distribute grapes on top. Whisk eggs, sugar, crème fraîche and cream together and pour evenly over grapes. Sprinkle almond sticks and bake at 180°C (350°F) fan‑forced for 35 minutes. Cool and dust with powdered sugar before serving.
