Grain Salad with Tomatoes and Mozzarella

A grain salad with tomatoes and mozzarella is always delicious.

Ingredients

  • 350 g durum wheat
  • Salt
  • 200 g yellow cherry tomatoes
  • 200 g red cherry tomatoes
  • 100 g pitted black olives
  • 250 g mini mozzarella balls (9% fat)
  • 2 stems basil
  • 1 Garlic clove
  • 60 ml vegetable broth (cold)
  • 4 tbsp white balsamic vinegar
  • 2 tbsp olive oil
  • Pepper

Instructions

    Cook the durum wheat according to package instructions in plenty of boiling salted water, drain and let stand.

    Meanwhile wash and halve the tomatoes. Halve the olives as well. Drain the mozzarella. Wash the basil, pat dry and cut into fine strips.

    Peel the garlic and press it into the wheat. Mix well with vegetables, basil strips and mozzarella.

    Stir the broth with vinegar and oil and pour over the salad. Season with salt and pepper and serve on four plates.
