Ingredients

  • 250 g mixed leafy greens (arugula, radicchio, frisée, lamb's lettuce... )
  • 200 g small tomatoes
  • 100 g raspberries
  • 0.5 bunch chives (coarsely chopped)
  • 1 tbsp raspberry vinegar
  • 1 tbsp White Wine Vinegar
  • 4 tbsp olive oil
  • Salt
  • black pepper (freshly ground)
  • 0.5 tsp mustard
  • a pinch sugar

Instructions

    Wash, rinse, and tear the greens into bite-sized pieces as needed.

    Rinse the tomatoes and halve them.

  3. 3.

    Rinse the raspberries.

  4. 4.

    Whisk together the vinegars with mustard, sugar, salt, and pepper; beat in the oil until emulsified, then taste and adjust seasoning.

    Combine salad ingredients with the vinaigrette and serve on plates.
