Gorgonzola and Wild Garlic Cream with Pine Nuts

A creamy Gorgonzola and wild garlic sauce enriched with toasted pine nuts. Try this recipe and many others from Spoonsparrow!

Ingredients

  • 30 g pine nuts
  • 2 tsp oil
  • 400 g Gorgonzola cheese
  • 500 ml heavy cream
  • Salt
  • Pepper (freshly ground)
  • 4 Tbsp finely chopped wild garlic leaves

Instructions

    Toast the pine nuts in a pan with oil over medium heat; add the wild garlic at the end, warm briefly, season with salt and pepper, then let cool.

    Drain the Gorgonzola through a sieve. Whip the cream to stiff peaks, fold into the cheese mixture, and season with pepper.

    Serve by garnishing the Gorgonzola-wild-garlic cream with pine nuts and additional wild garlic leaves.
