Gorgonzola and Wild Garlic Cream with Pine Nuts

Ingredients
- 30 g pine nuts
- 2 tsp oil
- 400 g Gorgonzola cheese
- 500 ml heavy cream
- Salt
- Pepper (freshly ground)
- 4 Tbsp finely chopped wild garlic leaves

Toast the pine nuts in a pan with oil over medium heat; add the wild garlic at the end, warm briefly, season with salt and pepper, then let cool.

Drain the Gorgonzola through a sieve. Whip the cream to stiff peaks, fold into the cheese mixture, and season with pepper.

Serve by garnishing the Gorgonzola-wild-garlic cream with pine nuts and additional wild garlic leaves.
