Ingredients
- 4 untreated lemons
- 0.25 l freshly squeezed lemon juice
- 1 lemon (grated zest)
- 150 g sugar
- 0.25 l white wine
- 40 g cornstarch
- 2 egg yolks
- 3 egg whites
- 50 g chopped almond kernels
- cookies (for garnish)
Instructions

Bring lemon juice, zest, 1/8l wine and 100 g sugar to a boil. Whisk starch and egg yolk with the remaining wine. Gradually stir the starch mixture into the boiling liquid while stirring, bring back to a boil. Beat egg whites with remaining sugar until very stiff, fold into the hot cream, pour into a bowl and chill.

Fill the chilled cream into the lemons, sprinkle toasted almonds on top, serve with cookies if desired.
