Goat Cheese Spinach Pockets
Spoonsparrow goat cheese spinach pockets are always wonderfully good.
Ingredients
- 500 g fresh spinach
- Salt
- 20 g pine nuts
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 200 g Goat cheese
- nutmeg
- 300 g filo dough
- 1 Egg white
- oil (for frying)

Wash, trim and briefly blanch the spinach in salted water, then drain, shock, squeeze out excess liquid and chop. Toast the pine nuts in a dry pan until fragrant. Peel and finely chop the onion and garlic. Sauté both in hot oil until translucent, then let cool. Dice the goat cheese and mix with the spinach, onion-garlic mixture, and pine nuts. Season with salt and nutmeg.

Fold the filo sheets apart to create pockets. Cut the dough into strips about 7x22 cm. Place roughly 2 tbsp of filling at one end, fold in a zigzag to form a triangle, continuing to the top edge; brush the edges with egg white and press together. Fry in a wide, tall pan with plenty of oil, 2-3 minutes per side until golden brown. Drain on paper towels before serving.
