Glazed Carrots with Pine Nuts

Spoonsparrow glazed carrots: delicious companions for fish, meat or veggie dishes!

Ingredients

  • 2 bunch young carrots
  • 2 tbsp pine nuts
  • 30 g Butter
  • 3 tsp Honey
  • 2 tbsp freshly chopped parsley
  • Salt
  • freshly ground pepper

Instructions

  1. 1.

    Peel the carrots, leaving a bit of green. Cut them lengthwise in half. Roughly chop the pine nuts. Heat the butter in a pot and steam the carrots over low heat covered for 6–8 minutes. Add 2–3 tbsp water.

    Stir in the honey just before the end of cooking. Finally mix in the parsley and pine nuts.

    Season with salt and pepper and serve immediately.
