Ingredients

  • 350 g glass noodles
  • 500 g Green Asparagus
  • 3 tbsp light soy sauce
  • 1 red bell pepper
  • 1 Papaya
  • 2 red chili peppers
  • 1 tsp freshly grated ginger
  • 1 tbsp black sesame seeds
  • 4 tbsp light sesame oil
  • a pinch of brown sugar
  • a splash of lime juice

Instructions

    Cook the glass noodles according to package instructions.

    Peel the lower third of the asparagus and cut the spears into 3-4 cm pieces. Simmer in hot water with 2 tbsp soy sauce for about 10 minutes.

    Wash, halve, and trim the bell pepper; slice into strips. Peel the papaya, halve it, remove seeds, and cut flesh into thin strips. Wash and trim the chili peppers; slice into rings. Combine ginger, sesame seeds, remaining soy sauce, and sesame oil; season with sugar and lime juice.

    Drain the noodles and asparagus; toss with the dressing and remaining ingredients. Let sit for about 10 minutes before serving warm.
