Ingredients

  • 300 g glass noodles
  • 2 bell peppers (red and yellow)
  • 1 Red Onion
  • 2 tbsp chili sauce (sweet-spicy)
  • 1 tsp finely chopped ginger
  • 2 tbsp sesame oil
  • 3 tbsp soy sauce (light)
  • pinch of brown sugar
  • splash lime juice
  • 1 tbsp coarsely chopped parsley
  • 50 g peanuts (unsalted)

Instructions

    Cook the glass noodles according to package instructions, drain and set aside.

    Wash the bell peppers, halve them, remove seeds, and slice into thin strips. Peel the onion and cut into thin rings.

    Combine chili sauce with ginger, sesame oil, and soy sauce in a bowl. Season with brown sugar and lime juice.

    Toss the drained noodles with onion rings and pepper strips. Add the dressing, sprinkle with parsley and peanuts, and serve immediately.
