Ingredients

  • 1 cube fresh yeast (42 g)
  • 300 g rye flour
  • 200 g Whole Wheat Flour
  • 1 tsp salt
  • 100 g rye bran
  • 75 g sourdough starter
  • Butter (for greasing the molds)
  • 4 tbsp rye bran (for dusting)

Instructions

    Dissolve the yeast in 300 ml lukewarm water. Mix the flours with the salt and rye bran, then transfer to a bowl. Create a well in the center, pour in the yeast mixture along with the sourdough starter, and knead everything into a smooth dough. Cover and let rise in a warm place for 1 hour.

    Preheat the oven to 200°C (392°F) with upper and lower heat. Grease two cylindrical loaf pans (8 cm diameter) and dust them with rye bran. Divide the dough into two portions and fill the prepared molds. Bake in the preheated oven for 45-60 minutes. Remove, carefully lift out of the mold, slice, and serve.
