Apple-Yogurt Layered Delight with Nut Crunch

Ingredients
- 4 apples
- 125 ml apple juice
- 2 tbsp gelatin sugar
- a few drops lemon juice
- 25 g almonds, hazelnuts and walnuts each
- 3 tbsp sugar
- some oil
- 400 g sour cream
- 2 tbsp sugar
- 100 g whipping cream
- 1 packet vanilla sugar
- mint
Instructions

Quarter the apples, peel and core them. Cut apples into strips. Steam apples with apple juice for about 3 minutes. Stir in gelatin sugar and simmer gently for another 3 minutes. Taste with a few drops of lemon juice. Cool the apple compote.

For the nut crunch, roughly chop almonds, hazelnuts and walnuts. Caramelize the sugar. Toss the nuts briefly in it and place on a lightly oiled piece of foil. Let cool.

Whisk sour cream with sugar. Whip the cream until stiff peaks form while letting vanilla sugar swirl through. Fold the whipped cream into the sour cream.

Break or chop the crunch into pieces. Layer apple compote and yogurt-cream mixture in a bowl, sprinkle with crunch, and garnish with mint.
