Ingredients

  • 200 g almonds
  • 100 g powdered sugar
  • 150 g soft butter
  • 3 tbsp grated orange zest
  • 1 egg
  • 200 g Flour
  • 1 tbsp Lemon Juice
  • 150 g candied ginger (finely diced)
  • 1 egg yolk

Instructions

    Grind the almonds with powdered sugar in a hand mill until fine.

    Beat butter, orange zest and egg until frothy; fold in almond‑sugar mixture, flour and lemon juice. Shape dough into two rolls (~4 cm diameter), wrap in foil and chill for about 3 hours.

    Slice the rolls into ~4 mm thick rounds. Place on parchment paper with space between, brush with beaten egg yolk, sprinkle ginger cubes, and bake at 180 °C (mid‑rack) for 12–15 minutes.
