Gin-Marinated Salmon Bites

Ingredients
- 200 g salmon fillet (skinless)
- 100 ml gin
- 1 lemon (juice)
- Sea salt
- 100 g crème fraîche
- 1 tbsp freshly chopped dill
- pepper (ground)
- 9 young spinach leaves
- 9 oat biscuits
Instructions

Rinse the salmon and pat dry. Place in a freezer bag, pour in gin and lemon juice, seal, and marinate in the refrigerator for about 1 hour.

Preheat the oven to 100°C with both top and bottom heat.

Place the salmon with the marinade in a baking dish, season with salt, and bake for approximately 25 minutes.

Whisk the crème fraîche with dill and season with salt and pepper.

Rinse the spinach, clean, and pat dry. Place on oat biscuits. Remove salmon from oven, let it cool slightly, then cut into 9 pieces. Arrange on the spinach, top with the cream sauce, and serve.
