Garlic White Bread

Ingredients
- 500 g wheat flour type 550
- 100 g wheat bran (Type 1700)
- 300 ml lukewarm water
- 42 g fresh yeast (1 cube)
- 3 tbsp olive oil
- 1 tsp salt
- 2 Garlic cloves
- flour (for the work surface)

Add flour to a bowl, set aside 1 tbsp of the bran. Mix remaining bran, 2 tbsp oil and salt with the flour. Stir the yeast into lukewarm water until smooth and combine with the flour mixture. Knead everything into a smooth dough using the dough hooks of an electric hand mixer, cover and let rise for about 45 minutes in a warm place.

Split garlic into cloves and peel them.

Knead the dough thoroughly on a floured surface, divide into two parts and fold half the garlic into each. Shape into balls and let rise again for about 45 minutes. Form the dough balls into long loaves, brush with remaining oil and sprinkle with reserved bran. Bake in a preheated oven at 240 °C for 10 minutes, then reduce temperature to 200 °C and bake for another 15–20 minutes until done. Remove and cool.
