Soft Yeast Rolls

Ingredients
- 500 ml whole milk
- 60 g oats
- 50 g fresh yeast
- 2 tbsp honey
- 1 egg
- 750 g wheat flour
- 1 tsp salt
- 40 g unsalted butter

Warm the milk in a pot to lukewarm (about 37°C). Stir in the oats. Crumble the yeast into a large bowl and pour in some of the milk. Mix with a hand mixer or stand mixer. Gradually add the remaining milk. Then add the honey, egg and mix well. While the machine runs, spoon in the flour gradually. Thoroughly fold in the salt and butter. Cover the dough with a cloth and let it rest for about 1 hour in a warm place.

Divide the risen dough into 20 equal pieces and shape each into smooth balls. Flatten slightly and place on baking trays lined with parchment paper. Prick the rolls several times with a fork. Let them rest covered with a cloth again for about 30 minutes.

Preheat the oven to 220°C (425°F) with upper and lower heat. Bake the rolls for about 10 minutes until golden brown. Cool on a wire rack.
