Ingredients

  • 350 g shrimp (headless)
  • 4 tbsp olive oil
  • 0.25 l rosé wine
  • 0.5 tsp black peppercorns
  • 2 Garlic cloves
  • 1 bay leaf
  • 2 tbsp lemon juice
  • Salt
  • ground pepper

Instructions

    Peel, devein, wash and pat dry the shrimp.

    Roast shells in 1 tbsp hot oil, deglaze with wine. Add a peeled and halved garlic clove, bay leaf, and peppercorns to the liquid. Simmer over medium heat for about 10 minutes. Strain through a sieve and reserve the broth.

    Peel remaining garlic and finely chop. Sauté lightly in leftover oil, add shrimp and deglaze with the broth. Let it simmer for about 2-3 minutes on very low heat. Season with lemon juice, salt, and pepper. Serve with baguette if desired.
