Ingredients

  • 4 cod fillets (about 140 g)
  • Salt
  • Pepper (freshly ground)
  • 1 small broccoli head
  • 4 Carrots
  • 1 bunch spring onions
  • 150 g Mushrooms
  • a handful flat-leaf parsley
  • 1 untreated lemon
  • 50 ml dry white wine

Instructions

    Wash the fish and pat dry with kitchen paper. Season both sides with salt and pepper. Wash the broccoli and cut into small florets. Peel the carrots and slice into sticks. Trim the spring onions, wash and halve lengthwise. Clean the mushrooms and quarter them.

    Wash the parsley, shake dry and chop the leaves. Rinse the lemon under hot water, pat dry and zest with a microplane. Slice the zest into thin strips and squeeze half a lemon for juice.

    Preheat the oven to 200°C fan. Spread four large pieces of foil on the work surface and arrange the vegetables on them. Season with salt and pepper. Place the fish fillets on top of the veggies, sprinkle with lemon zest, drizzle with white wine and lemon juice, then scatter parsley over all.

    Seal the foil around the fish and vegetables. Bake on a tray in the preheated oven for about 35 minutes. Serve directly from the foil.
