Ingredients

  • 720 g sea bass fillet without skin (4 fillets)
  • 1 tsp lemon juice
  • 1 bunch parsley
  • 1 bunch Basil
  • 3 cloves garlic
  • 1 lemon (unprocessed)
  • 3 small zucchini
  • 6 tbsp Olive oil
  • 2 tbsp pine nuts
  • Salt
  • Pepper
  • 1 baguette

Instructions

    Wash the fish cold, pat dry and drizzle with a little lemon juice. Wash the herbs, shake off excess water, pluck the leaves and roughly chop. Peel the garlic and slice very thinly. Rinse the lemon hot and shave into thin slices.

    Wash the zucchini well and slice thinly as well. Seal each side of the foil sheets. Place lemon slices (except two) and vegetables inside, season with salt and pepper. On top of the vegetables place two fish fillets, sprinkle garlic, herbs, pine nuts, 3 tbsp oil and a lemon slice on each.

    Seal the other end of the sheet tightly, lay it on a cold baking tray and bake at 200°C (convection) in a preheated oven for about 20 minutes. Meanwhile cut the bread. Open the foil sheets, unfold them onto a plate and serve.
