Galettes with Savoy Cabbage Filling

- 100 ml milk
- 75 g whipping cream
- 30 g buckwheat flour
- 30 g wheat flour
- 1 pinch salt
- 2 Eggs
- 1 tbsp peanut oil

- 1 tbsp sour cherries
- 125 ml orange juice
- 500 g savoy cabbage
- 1 Shallot
- 1 tbsp peanut oil
- 1 tsp Sambal oelek
- Salt
- 1 tsp parsley
- thyme (1 tsp, chopped)
- rosemary (1 tsp, chopped)
- 2 tbsp crème fraîche

Mix the milk with the cream. Stir in both flours. Beat in salt, eggs and oil.

Heat a little oil in a medium pan, pour about 2 tbsp of batter and spread by gently tilting the pan. Cover and cook on medium heat until golden yellow on both sides; bake seven more crepes and keep warm.

Soak sour cherries in orange juice. Clean, quarter and slice the savoy cabbage into strips. Peel and finely chop the shallot, then sauté in hot oil until translucent. Add the cabbage and cherries with the juice, stir in sambal oelek and salt, bring to a boil and simmer covered on low heat for about 5 minutes until al dente. Mix in herbs and crème fraîche, season with salt and serve with the galettes.
