Ingredients

  • 4 small Charentais melons
  • 150 g honeydew fruit flesh
  • 1 untreated lime (juice)
  • 1 untreated orange (juice)
  • 100 ml white port wine
  • 3 tbsp powdered sugar
  • 200 ml sparkling wine
  • mint (for garnish)

Instructions

    Cut a wide lid from the melons, remove the seeds and gently scoop out the flesh. Dice the honeydew fruit into small cubes, set aside ¼, and put the rest in a bowl.

    Blend the remaining ingredients finely, mix in the reserved melon pieces, chill for 1 hour. Fill the hollowed melons with the chilled soup and serve garnished with mint.
