Fruitful Rice Salad with Pesto

Ingredients

  • 250 g long grain rice
  • Salt
  • 50 g crème fraîche
  • 120 g arugula pesto (1 jar)
  • 1 sweet-sour apple
  • 50 g walnut kernels
  • Salt
  • freshly ground pepper
  • apple slices (and wild herbs for garnish)

Instructions

    Wash the rice under running water in a sieve, bring to a boil with slightly salted water at just below boiling point and let it simmer covered on low heat for about 25 minutes until drained.

    Roast the walnuts in a non-stick pan without fat, cool them, then roughly chop. Peel, halve, core, and dice the apple as desired. Place the rice in a bowl. Mix crème fraîche with the pesto, season with salt and pepper, fold in the apples and two-thirds of the nuts, then combine with the rice. Cover and chill for about 1 hour before serving.

    Serve garnished with apple slices (or wedges) and wild herbs.
