Couscous salad with cocktail tomatoes, cheese and avocado cream from Spoonsparrow is always a hit.

Ingredients

  • 300 g couscous (instant)
  • 400 ml Vegetable broth
  • 200 g Cherry tomatoes
  • 150 g Feta
  • 80 g arugula
  • 1 Red Onion
  • 1 Avocado
  • 150 g Sour cream
  • 0.5 lemon (juice)
  • 1 Garlic clove
  • Salt
  • pepper (from grinder)
  • 2 tbsp olive oil

Instructions

    Place couscous in a bowl, pour boiling broth over it and let stand for about 10 minutes to absorb the liquid. Wash, clean and halve the tomatoes. Cube the feta. Rinse the arugula, dry with a salad spinner and tear into small pieces. Peel, halve and slice the onion into thin strips.

    Peel the avocado, cut in half, remove the pit and mash the flesh with a fork. Stir in sour cream with 1-2 tbsp lemon juice. Peel the garlic, crush it, mix into the dressing and season with salt and pepper.
