Ingredients
- 2 slices of roast beef (200-250 g each, well rested)
- 1 Tbsp clarified butter
- 250 g mixed leaf lettuce (as desired)
- 150 g Strawberries
- 2 tbsp white wine vinegar
- 1 tsp raspberry vinegar
- 4 tbsp olive oil
- 1 tsp cane sugar
- 0.5 tsp mustard
- Salt
- Pepper (freshly ground)
Instructions

Brown the roast beef in a very hot pan with clarified butter on each side, then reduce heat and cook 2-4 minutes per side as preferred; remove and wrap in foil to rest for about 5 minutes.

Wash, trim, rinse, dry, and tear lettuce into bite-sized pieces if desired. Wash and clean strawberries.

For the dressing, whisk all ingredients together, fold in two mashed strawberries, taste, and mix with prepared salad and remaining strawberries.

Slice roast beef thinly against the grain. Arrange salad on a plate and loosely arrange roast beef slices on top.
