Fruitful Easter Confection
The fruity Easter confection from Spoonsparrow keeps the gut moving and supports heart and circulation.
Ingredients
- 80 g whole-grain crackers (8 slices)
- 400 g dried fruit (e.g., apricots, plums, figs, raisins)
- 100 g cashew nuts
- 1 Organic Orange
- 15 g cocoa powder (2 tbsp)
- 15 g shredded coconut (2 tbsp)

Place cracker slices in a freezer bag and crush finely with a rolling pin.

Coarsely chop the dried fruit and cashews with a large knife, then transfer to a bowl. Add the crushed crackers.

Wash the orange hot, dry it, grate its zest finely. Halve the orange and squeeze out the juice.

Add the orange zest and 6 tbsp of orange juice to the crumb mixture and mix into a smooth paste using hand mixer attachments; if too thick, add more juice as needed.

Spoon cocoa powder onto one shallow plate and shredded coconut onto another. Using hands, form small Easter egg shapes from the nut paste. Roll half of the eggs in cocoa powder, the other half in coconut, then place them in chocolate molds.
