Spanish Potato Omelette

For the delicious Spanish potato omelette you only need five ingredients. Easy and without much effort, you can prepare this classic Spanish dish.

Ingredients

  • 350 g starchy boiling potatoes
  • 1 onion
  • 1 Garlic clove
  • 3 tbsp olive oil
  • 4 eggs
  • Salt
  • Pepper

Instructions

    Peel, wash and slice the potatoes thinly.

    Peel and finely chop the onion and garlic. Heat half of the olive oil in a pan, fry the potato slices while stirring occasionally over medium heat for about 25 minutes. Add onion and garlic during the last 10 minutes. Season with salt and pepper.

    Whisk the eggs, season with salt and pepper. Let the potatoes cool slightly and add them to the eggs. Pour the remaining olive oil into the pan and pour in the egg-potato mixture. Let it set, then after about 6 minutes flip using a plate, slide back into the pan and cook for another 4–6 minutes until done. Cut the omelette into pieces, arrange on a plate and serve.
