Fruitful Curry Sauce

Ingredients
- 150 g almonds (dehulled)
- 1 Garlic clove
- 2 cm ginger
- 2 tbsp mild curry powder
- Salt
- Pepper (freshly ground)
- a pinch cumin
- 100 ml Vegetable broth
- 300 g double cream
- 0.5 Banana
- 5 tbsp orange juice
- orange peel for garnish

Peel the garlic and ginger, then finely chop them with the almonds in a food processor. Transfer everything to a non-stick pan and sauté over medium heat without oil; add the spices and pour in the broth, letting it simmer for about 10 minutes. Pour the mixture into a blender, add the banana, and blend vigorously again, gradually adding the double cream spoon by spoon until a smooth creamy consistency is achieved. Adjust seasoning as needed and finish with orange juice to taste.
