    Boil the sugar and about 80 ml water quickly in a stainless steel pot with a thick bottom. Let it bubble until the sugar thermometer reads 160°C, then remove the pot from the heat immediately.

    Spread the hot caramel thinly onto a sheet of parchment paper on a baking tray, and use as desired for decorating sweets or for making candies and lollipops.
