Ingredients

  • 75 g dried tomatoes
  • 3 Garlic cloves
  • 4 sprigs thyme
  • 0.5 tsp Dried oregano
  • 0.5 tsp wild fennel seeds
  • Olive oil (to top up)

Instructions

    Place the dried tomatoes in a bowl and pour hot water over them. Let soak for about 1 hour, then drain and pat dry on a kitchen towel.

    Peel the garlic and slice thinly. Rinse the thyme, shake off excess moisture, and tear into small pieces. Layer the tomatoes with thyme, garlic, oregano, and wild fennel seeds in a jar, topping with olive oil. Store tightly sealed in a cool dark place.
