Fruitful Chicken with Wok Vegetables

Ingredients
- 350 g chicken breast fillet (cut into pieces)
- 3 tbsp oil
- 1 onion
- 1 Garlic clove
- 1 red bell pepper
- 75 g sugar snap peas
- 4 tbsp sherry
- 4 tbsp light soy sauce
- 1 tbsp tomato purée
- 1 tbsp flour
- 2 oranges
- 100 g bean sprouts
- Salt
- Pepper (freshly ground)

Peel and chop the onion.

Wash, trim, halve, deseed, remove white membranes from the bell pepper, then slice into strips.

Wash, trim, cut off ends of sugar snap peas.

In a hot wok or pan, sear chicken in oil for 2-3 minutes; add onion, snap peas, bell pepper, squeeze garlic and cook another 5 minutes while stirring.

Peel oranges with a knife, remove white membranes, slice along the membranes to create fillets, catch the juice.

Whisk sherry, soy sauce, orange juice, flour, and tomato puree together; pour into wok, stir until thickening. Fold in bean sprouts, season with salt and pepper, add orange fillets, and serve.
