Ingredients

  • 3 chicken breast fillets
  • 2 large potatoes
  • 2 Parsnips
  • 2 onions
  • 3 slices of breakfast bacon
  • 3 tbsp olive oil
  • Salt
  • pepper (ground)
  • 2 tsp chopped rosemary needles
  • 4 egg yolks
  • 1 tbsp freshly grated horseradish

Instructions

    Peel and cut the potatoes and parsnips into bite-sized pieces. Cut the chicken breast into similar pieces. Peel the onions and slice them lengthwise into wedges. Break the breakfast bacon into small pieces. Mix all together, season with salt, pepper, and rosemary, place in a greased baking dish, drizzle with olive oil, bake at 200°C for 30 minutes, stirring occasionally.

    Serve on a plate and garnish with horseradish on top. Place the four egg yolks (in their shells) beside the dish.
